The Main Ingredient

Shipton Mill

Has been a trusted supplier of ours since I first started my bakery in 2015.

They offer a wide variety of organic and specialty flours, all of which are made from high-quality ingredients. Shipton Mill has been committed to sustainability since its founding in 1979. They work with like-minded farmers who promote biodiversity and soil health, and their mill is powered by 100% renewable energy.

Wildfarmed

“Wildfarmed is a new supplier whose flour is made from a diverse variety of wheat, grown alongside a variety of plants, grasses, and legumes. This method of growing, called ‘Regenerative Agriculture,’ helps to improve soil health and biodiversity, which is beneficial for the environment. They only stone-mill the grain, which means that they grind all three parts of the grain together: the bran, the germ, and the endosperm. This results in a fragrant, golden flour with a rich flavour and high nutritional content.”

What is Regenerative Flour?

“Regenerative flour is a term used to describe flour produced using regenerative agricultural practices. Regenerative agriculture is an approach to farming that focuses on improving soil health, biodiversity, and ecosystem resilience while also sequestering carbon from the atmosphere. By adopting regenerative practices, farmers aim to enhance the health and vitality of the soil, which, in turn, improves the nutritional quality of the crops they grow. By supporting regenerative agriculture, individuals can contribute to the restoration of ecosystems, carbon sequestration, and the creation of a more sustainable food system.”
